They fry it in spicy oil, dunno what they put in and I don't want to drive to China town every time I want cheap meat sopping in spicy oil

2017-11-12 20:47:07 UTC

1 cup of vege-oil, 1cup of peanut oil, 1/4th cup of crushed (or just ground dry) chili peppers (average-mild variety) and some chinese peppercorns

2017-11-12 20:47:24 UTC

dash of sesame oil to the mix

2017-11-12 20:47:46 UTC

2017-11-12 20:48:55 UTC

if you want to make it nice you can throw some green onions and ginger in there too

2017-11-12 20:49:07 UTC

(i prefer to use them when frying and not in the oil directly)

2017-11-12 20:49:23 UTC

some places use sugar to get good coating on the stir-fry

2017-11-12 20:49:40 UTC

but its not needed in the oil imho if you have good burner

2017-11-12 20:52:24 UTC

They add some other spices I can't identify, think I need to kidnap a chink

2017-11-12 20:53:17 UTC

>250 gr chicken breast
>5 tbsp soy sauce
>1 tbsp brown sugar
>5 tbsp rice wine
>2 tbsp peanuts
>3 tbsp tapioca starch
>scallion
>oil

>cut chicken into tiny pieces
>mix soy sauce, (half of it) rice wine, brown sugar and tapioca
>add to chicken
>let soak in the fridge for a few hours
>put a bit of oil in pan
>heat to max heat
>add chicken
>cook it until chicken is done
>add rest of soy sauce
>add peanuts
>add scallion
>cook another minute
>serve with rice
