It's mainly blocking and parrying with attacks in-between

Basically you have health and posture

... So yeah, dark souls.

You can break posture and kill enemies without emptying their hp

By breaking their posture

It's largely like souls but if you play it like souls you'll keep failing

It's not about rolling around to avoid attacks like a monkey

So what does this have to do with romance
