In this case the lens is the air above the lake which has water vapor, water has a greater index of refraction than air, so it can bend light, this can be demonstrated with a simple car ride, if the interior an exterior temperatures are different enough, you will see the air shimmer when you roll down your window.

Another example is a glass, filled with water, and a paper with an arrow drawn, the arrow will twist the other way because of the fact that the water had a greater index of refraction than air.

I have seen light bend a lot in Arizona. It does not do so with perfection in the air. I also saw it in Colorado and again nothing but perfect bending. There it would be very cold in Denver but warmer in the mountain as the temp difference was so strong. Yes light bent but like a mirage with a lot of waves.

I have literally had globers claim that you could look all the way around the earth it bends so perfectly. Wow oh wow. That is pure religion. Impossible in reality.
