your accounts are not tied to your phone, you can log in freely accross different devices with the email and password you registered with.

(although it is true some discord servers require phone authentication, but this server does not.)

I know I can change passwords, but what about Email? or Do I have to start all over? when you log into discord you enter in an email address and a password, if you can remember those two details you can always log back into that same account.
