Because Earth is round, the sun will come back into your line of sight.If you don't have a hill, you could even try lying on your stomach to watch the sunset and then standing up to get a higher line of sight.

What does hollow earth mean?

Not sure where you got the **presumtion** of how a sunset should work on a flat earth, but you can still elevate yourself and see the sunset. That's kinda partially the point of perspective.
