But it appears as if it would help bring life to the bar and personality to the characters
No it brings back a minor character in an uneccesary way to the overarching plot of the film. If you do that too much the film just becomes all over the place.
It works on a foundation between Chewbacca and Rei that's just not there, which is partly why it's so weird he sticks with her after Han dies
While it brings him back and involves him, it's less about him and more about his relation to Rei and Rei's vulnerabilities
And like I said, it brings personality to the bar
Without this scene, there's really nothing you can say about it
But it's clearly not an important scene for rei, that isn't the point and it's precisely the disjunction with the rest of the film that probably led it to not be included.
This shows off the scum, and also shows off the every-man-for-himself lifestyle in the bar as nobody helps the guy, instead having another alien act annoyed by their fight
Personally I do think it's important, as it shows weakness that is otherwise completely lacking. It also shows off her quick to fight behavior that could really be a problem for her, shown as she has the gun ripped out of her hand so fast
Without a scene like this, she looks invincible

But they already had enough establishing scenes of the bar, there isn't any reason to focus on the scuminess of background characters unless it's important in some way, which in this case it isn't. They aren't doing shady deals there, they don't need to spend screen time establishing atmosphere that isn't important. Also if this was the only scene where rei showed some type of weakness physically then that would be stupid, because it is so minor, it would just be erratic. Also the whole esteblishment of reis character seems to focus on how adept she is in various ways but emotionally she seems stunted due as of yet unkown circumstances, if they made her seem weak in other ways it would remove focus comparatively.

that is literally all the focus you need, I'm not saying this movie is great and has no room for improvement. But this scene doesn't add anything that would improve it
