If that is the true model, how come we can see the moon during the day sometimes?

First you are talking about the Law of Gravity, then you bring up the Second Law of Thermodynamics. Talking about 2 completely different things.
Gravity does act on the molecules, but it is incredibly weak and doesn't really move them at all.
Water "finds its level"? Water is bound by the same forces we are. It goes wherever forces push it. If forces are equal, it doesn't go anywhere.
Except horizons in spherical geometry aren't a straight horizontal line.

In rectangular geometry, lines can be straight. However, take the same line on a sphere, it is not "straight" as perceived by us.

I still find it odd how Flat Earth Society says Mars is round but not Earth. Why would Mars be round but not Earth?
