we can't scientifially determine what is underneath. deepest we've drilled is 8 miles. so would just be a guess

we can only observe/measure the surface

If the earth is flat then if the sun was circling around the earth how come we can’t see the sun all the time

The sun is supposed to be extremely bright

there are multiple reasons why rays look like that

its not a 2D plane of sight

The light doesn’t reach us but we still should be able to see the sun

there is a 3rd axis

it moves too far away

Nah say if a light bulb is down the street the light doesn’t reach but you can still see the bulb bright as day
