It's already noticeably different. Some characters in the book are dead, or have come back, or never existed but they do in the show
Like characters were handled differently in seasons 1 and 2. AFAIK GRRM said it'll be different, and some storylines already cannot be the same

I read them hard copy and while I’ll admit i trudged through the first a bit as soon as I started on the second I couldn’t put it down
I finished book 2 and 3 in the span of a month
He’s about to start a new trilogy this fall and I’m stoked
The guy knows how to write characters and has one of the best narrator voices I’ve ever witnessed

Yeah Sanderson is mostly fine but every so often it feels like a scene was there for diversity points, but it might just be that he genuinely wanted the scene and couldn't smoothly fit it in
Sanderson in my experience suffers from unsmooth character development
I don’t know how much he’s improved since mistborn but Elend and Vin needed another 50 pages of screen time to justify her love for him
Which is part of why I’m actively avoiding a love interest writing the book I am now

Stormlight Archive hasn't been quite so relationship focused but each book is 1k pages so characters have had time to interact
I didn't find Vin and Elend unreasonable though. They're young and impulsive. If anything it would be a question of how long things would last
I liked them together but It never felt more than curiosity about each other with mild interest attached until Brandon straight up let us know in Vin’s thoughts that she was in love.
