Plenty of country towns in Victoria that have plenty of personality
New South Wales I dunno much about since I only ever traveled there for work, but Vic is pretty decent

I don’t think they’re as hospitable as some places but you really get to see the country in country terms in places such as, say, Geelong or Bendigo
Some good drives through the great ocean road (which is a touristy place, but bear with me) then swing up to Halls Gap and do some mountain climbing or something
I don't mind some touristy. I just know what its like to go to places outside the country and it feels too American than where I'm supposed to be
Port cities are pretty nefarious for it

It’s a good drive to go through the Goulburn valley and visit some farms
Mildura etc
Echuca was pretty hostile when I went there but that’s more because I’m brown I think...
