Why are ebooks black and white

Sometimes i want to read books where colors are needed in order to understand

I cant imagine a book that would require that outsode of ones you also need to have electronic tactile feedback so you can touch the fluffy cow when it tells you to

For example a book about painting

Your ebook reader will show everything in black and white

they cant make eink color panels yet
