what am i looking at
I'm scared
I mean colorado is a part of the southwestern tradition which is my absolute favorite stuff to cook. But it hasn't made the same contributions texas, california, new mexico, and the Carolinas have made to national food. Largely because its hard in colorado to source domestic veggies and spices year round. Alot of colorados culinary scene isnt dependent on domestic/regional but import and cattle.
Interesting view
Yeah man, there is a place called Greeley colorado. It smells like cow shit, burning blood, and filth in a 25 mile radius
NO JOKE
One of the biggest cattle lots in the world
that single poster reminds me of every single one of this guy's uploads

The trick is spicing and getting ur aromatics from plants that grew out the same soil the meat was shitting in. Thats what makes the southwestern tradition so special. You have a brisket from a cow raised in central Texas thats got a rub in chiles that grew in central texas... it makes all the difference
😄
I haven't heard that before, sounds cool though. Chiles grow here, but very seasonal
Exactly
Omg wolfy dem shishito peppers tho
Thats why colorado aint so pronounced. Its extremely seasonal as to what can grow
Whereas in texas and california
Yeah tell me about it

I may have the opportunity to run a restaurant soon, from the technical/procedural standpoint. The food is very healthy, basic, and easy.
