In MvM, the machines come from one very specific point, go along a pre-designated path, and deploy a bomb. It is a last stand mode, but it very much has structure and you have to pay attention to the tactical situation outside of one building

In Zombies, you have multiple locations where zombies can get in, you constantly have to be on the move, there is no hold-down position that I've been able to find. I should also point out that a Sturmgewehr and Sniper's submachine gun operate very differently. Just as you said, there is no end either, it's mindless killing with powerups.
