Chainmail is good for knifes and smaller objects, but unless you are using blunt force, you'll need er pierce the armor, you'll have look for critical spots to target.

I just don't see a samurai winning in most cases, 12th century sure, they aren't played at all, late 13th and beyond, I see zero chance of them winning against a highly armored and most of the time, highly trained knight.
