Another important point here is the oil most people don’t use enough or the right kind.
I’m using 1/3 of a cup of Peanut Oil... this makes a huge difference in flavor.
Get it up to about 300 degrees and add the rice, stirring constantly.
Then start adding the veggies little by little as you stir.
This should take 10-12 minutes and the rice should be a transparent golden brown at this point and the pan still making a sizzling sound as you stir. TURN OFF THE HEAT.
And stir in the Eggs & Shrimp.
Keep stirring until the pan stops sizzling. It’s ready to serve at this point.

The common mistakes people make is
1. not chilling the rice before frying.
2. trying to cook the other ingredients in the rice they should be cooked separately and added later.
3. not enough oil and not having the oil up to temperature when they fry the once again cooled rice.
(and I highly recommend peanut oil)

step 3: add a small bit of milk (2% of whole works best for fluff), Start preheating oven to 325 degrees F do not preheat oven if you aren't adding cheese
step 4: cook eggs on stove until you have a good base
step 5: pull eggs OFF burner/stove, and add any cheese if you are going to if not finish cooking on stove and enjoy if not continue
step 6: crack 1/2 the amount of eggs rounded up if you used an odd number, scramble eggs add cheese, then pour egg on top
step 7: place pan/skillet in oven for 5 minutes check, and continue in 5 minute intervals until you can stick it in the middle with a toothpick and no runny eggs come out on it 🙂

Unfortunately I have to go light on the soy due to a person in the house special with dietary needs & absolutely NO MSG
I don’t use MSG and I use Lite Soy Sauce.
I can understand that but because of the extreme results or reaction I am forced to make my own egg rolls from scratch so she can enjoy instead of taking a trip to the hospital
