the sun does not actually 'rise' or 'set'.. it comes into view from afar (rises) then slowly disappears from view when too far (sets)
but you could still see the sun even if it revolves away above the flat plane??

nobody, i say that because an object cant change direction without an external force, so the sun has no why to rotate above earth
if nothing is making that happen
it's quite obvious that the sun follows a strict path laid out year after year, and does not deviate much from that path
it does not just change direction on a whim
The sun would be on its own circuit. Think of an electric train
