I've gotten to drive our teslas before, and that's basically how it works

so if you go twice as fast you have to provide 4x as much torque to maintain your speed

ICE is often geared specifically for high speed economy, that's why ford are dumping that 10spd into mustangs
with an ev the motor is always operating at a fixed economy
yeah, but the electric motors don't have a sweet spot the same
because you're turning electric energy more or less directly into kinetic
the resistance at speed impacts economy much more as there's no way of mitigating it
whereas with ICE you have all sorts of weird pressure and heat equations in between that make there be a narrower sweet spot for effeciency
also I've considerable doubts as to the ability of the "roadster" to live up to the performance quotes
although, the teslas have different gearing in the front and back motor, so one is more optimized for high speed cruising
