The non-binary is mainly an identity. Gender has always been the same as sex for years now. I don't know when they've changed the meaning of it. There's really a difference between identity and the sex you were born with. There are gender blood tests out there. They usually take blood for the fetus. I've never seen an actual non-binary. Most of the time it's a man or women who are both masculine and feminine
Also what is a third gender? Non binary doesnt count

Sure you can say maturity but you can say "I'm mature for this age" but no one will believe you since your like 12
if ya look like a dude, your gonna get called a dude, if you look like a woman your gonna get called a woman
if you try looking like a woman but your a man, your gonna get called a thing
yea if someone prefers he/she that's fine. They I will try not to use they unless it's really clear that its singular

I wouldn't use ze/zem because the point of a pronoun is to easily know if it's a Male or female. If someone uses they than people will think more than 1 person or unknown but unknown gender is usually not the case
