The non-binary is mainly an identity. Gender has always been the same as sex for years now. I don't know when they've changed the meaning of it. There's really a difference between identity and the sex you were born with. There are gender blood tests out there. They usually take blood for the fetus. I've never seen an actual non-binary. Most of the time it's a man or women who are both masculine and feminine

I wouldn't use ze/zem because the point of a pronoun is to easily know if it's a Male or female. If someone uses they than people will think more than 1 person or unknown but unknown gender is usually not the case
