Or according to that map, anyone in South America or South Africa would be even closer to the end of the earth

Correct but we don’t need maps to realize that air goes from directly above us to eye level. Which is a 90° angle considering a flat earth
I guess I don’t understand how there could be stuff past then end of earth when we can literally see what is out there

You cant travel to the horizon. It just keeps going. But if you travel to the spot where you saw the horizon and look up, the sky is above you again

What is under or around us
That implies that earth is infinite by saying you cant travel to the horizon. The oceans are also not infinite
