Owning your own server does not guarantee privacy at all and usually makes you less private
Unless you have a need for a dedicated IP

If you need a dedicated IP, just setup a VPN on your home router.
But if you want an ounce of privacy, using a home router as a VPN or a VPS is the wrong way to go

Perform a trace - it will say Digitalocean or whatever provider
if you are law enforcement - just ask

I think it depends on whether you want your own IP or if you want a shared IP
If you want your own external IP to use just get a VPS and I don't see a disadvantage to privacy from owning a dedicated IP
