It's more about the metaphysics, you want to minimize suffering of animals. The reason is you are given dominion over the Earth as a higher being, and you are thus the master and responsible for life on the planet. If you callously slaughter animals for pleasure and taste without consideration of suffering or consequences to ecosystem you will destroy the planet over time, or cause famines.
