if cataluña isn't part of europe anymore, they would have to have their own money. You can't keep europe advantages and throw away just the bad points it doesn't work like that and whoever told you so is either lying or talking out of his ass . Even though the habitants there may keep their spanish nationality, it has nothing to do with the creation of a new independant country and its related money
when you create a new country, you have a new money, and it turns out that its value will be really low compared to any other money for international trades and whatnot. So if you import anything, you're going to pay it the high price.
UK were lucky/smart/whatever to have kept their pounds because the brexit would have fucked them even harder then.
now if your newly created country decide to stay in EU, well, I don't see any huge reasons to part with the rest of Spain...
I might be lacking some informations about why that region wants its independance from the rest of Spain and still want to be a part of the EU. If you could tell me such reasons I might have a better insight on all of this

The first who is gonna benefit if other countries use euros is not the country itself but Europe, since the more usage of his currency the more valuable the currency is, money its not like a trademarked mickey mouse.
