I can see why it wasn't, it's sorta just fan service and is more violent than the rest of the film

It shows bar scum, brings personality to the place, shows weakness in Rei, etc

But it appears as if it would help bring life to the bar and personality to the characters

No it brings back a minor character in an uneccesary way to the overarching plot of the film. If you do that too much the film just becomes all over the place.

It works on a foundation between Chewbacca and Rei that's just not there, which is partly why it's so weird he sticks with her after Han dies

While it brings him back and involves him, it's less about him and more about his relation to Rei and Rei's vulnerabilities

And like I said, it brings personality to the bar

Without this scene, there's really nothing you can say about it
