The ending was underwhelming I'll give you that but Gael is a great boss.
The cool thing about a concept like that is that you can do that pulp style serial where you just go on one-shot adventures to all kinds of places and it just fleshes itself out over time
lol and the DLC didn't introduce anything

I don't find Souls games that hard really
They aren't. Unless you want to play Mage.
If you are having trouble with the difficulty level, there is a soft difficulty setting in that you can farm souls pretty quickly and just level up
The game is really as hard as you want it to be

The game is cryptic on purpose because you have to read all of the items
But other people figure it out for you

I hate the enemy ladden boss runs

I would accept harder bosses
like the run to the Smelter Demon
