Try upping your adaptability
I did a Boxer build with nothing but strength and adaptability
it affects the post-fire animation of weapons?
Well it increases the I frames of your rolls
because it wasn't my roll being slow or bad, its because while the whips get rolled up you are locked, and it takes so long
several enemies could be standing still, I do my attack, and their animation starts after I do, but they still land their hit before I can roll
Try rolling attacks for counters and only using heavy attacks for sure shots during an opponents longer animations
Yeah, i'd have to get used to spamming heavy attacks, since they're fairly faster
but still, Bonefist is more fun regardless
Next stop is either an endgame Curved GS, and the Puzzling Stone Sword
or just more caestus

Issue is, I have no clue whether every hit deals strike and thrust, or just specific hits deal thrusts. Not one of its attacks look like a thrust move

You can get it early game in SOTFS once you killed the last giant and the pursuer. Its next to the Kings door in the Forest of giants.
