Observation is the first step of the scientific method.

We don’t ever observe a curve.

It’s why it fails at operating by the scientific method.

If you don’t operate by it, you do not have proof.

we observed space, the moon, gravity, and proper (repeatable) ways to predict things on the globe

You have never observed the cause of gravity due to earth pulling mass to the center of a sphere, when you can’t observe curve for it to be a sphere.
