idk about FE, but I know some stuff for tactics

certain items have a skill you can learn, after finishing enough quests you can slowly master said skill so you can use the skill even without the weapon. do that enough times for different skills and you can unlock a new job

then rinse and repeat that. of course there's a story too, but ech
