These variations in spelling exist because of differences between American English and British English. Color is the spelling used in the United States. Colour is used in other English-speaking countries. The word color has its roots (unsurprisingly) in the Latin word color.

because it's HERB with an E not an O try and pronoun honour with the H and you will see what I mean
Also american english is far more influenced by german (which was actually more prodomenent in early ameriva)
And over time by other languages
British english had more from french, indian and others
