i take out the pith and seeds from the jalapenos and then adjust the spiciness of whatever im making by reintroducing the seeds. so if u take the seeds out, set them aside, make ur dish, then u can adjust how hot the food is by reintroducing the seeds, kinda like salt/seasoning
