Actually... the default is that you can't handle spice. That's the whole reason various plants evolved that. It's supposed to repell you. You build up tolerance by eating more of it.

You don't just jump right to something super spicy, you slowly ease yourself up.

I tried spicy noodles once

Noodles advertised as spicy usualy have no spice to them at all.
