I think Ill go into carbon dating for all the creationists here. When cosmic rays (high energy atomic nuclei) interact with the nitrogen 14 in the atmosphere, Carbon 14 is made. When the Carbon 14 bonds with Oxygen, it creates Carbon dioxide. This carbon dioxide is consumed by plants via photosynthesis so they can produce glucose. When an animal eats the plant, it also eats the carbon 14, this means that all animals have a bit of Carbon 14 in them at all times. The ratio of C14 to C12 in the atmosphere is usually the same, meaning the ratio of C12 and C14 in living organisms is almost always the same.

C14 has a half life of 5,730 years. If we know the current amount of C14 within a specimen, and the amount it had when it died, then we can easily determine its age (we can determine this by measuring the amount of C12 in it. Since the ratio of C12 to C14 is consistent, its easy to determine the original amount of C14).

Carbon dating has its limitations however. After 50,000 years the amount of Carbon 14 is minuscule, making contamination a huge issue. Contamination is usually not a big issue because its so small.
