cat 5 is enough, unless you are running an EXTREMELY long run

For the ehternet thats only gigabit on the consoles at least

higher categories are for very long runs or higher speeds, which consoles do not and cannot support

But it makes you feel better you can use cat 6, its really cheap

You can get adapters to plug them to sata or molex

With lo and high speed options

but they will run fixed speed

if you want to monitor speed or controll speed you will need to plug them into the board

and you need 1 header per fan generally
