Good easy chocolate cake, lots of room for modifications

PANCAKES
1 ½ cups flour

3 teaspoons baking powder

1 teaspoon + pinch salt

1 tablespoon + pinch white sugar

1 ¼ cups milk

1 large egg

2-3 tablespoons butter, melted

Hot pan (not too hot) butter pan and pour in appx 1/4 - 1/2 cup of mix. Cook on one side until entire cake "bubbles" and the bottom is golden brown. Flip and wait for about 2 minutes when bottom is golden brown too.

Chocolate Cake: Makes: One 20cm sponge layer

Ingredients
butter, for greasing
125g plain flour
225g caster sugar
50g cocoa powder
1 tsp bicarbonate of soda
1⁄4 tsp salt
125ml buttermilk (cultured), or 110ml milk plus 1⁄2 tbsp lemon juice
60g butter, melted
1 egg
125ml coffee (or water)

Mix the dry ingredients and wet ingredients separately, then mix both together until you get a smooth texture. Pour into tin, Oven will bake it at 180 Celsius, bake for 25-30mins
