So, I'm still quite new to discord and trying to figure out how everything works. I was under the impression that each server is basically run by the moderators who created it, and that the platform in general has no say or ability to control specific groups. Or something like that.

Yes discord servers are each individually owned by people but you can have multiple servers
Moderators are hand picked by the owner
