yeah your trainer probly meant "as long as the IP cant be connected to any persons other data its fine"
the first moment you can connect "this username comes from this IP" its tracking under gdpr
you can always do that

i also asked my lawyer about wiresharking networks
if the "live feed" what is not logged to anything counts as tracking
as person technicaly could filter and check user actions on it
lawyers answer to that "dont ask dont tell"
