If you weight yourself on a scale, you think it is mass. But if you step off of it and press on it with your hand, you can reach the same number on the scale. But you're not measuring mass this time, but energy from your arm
Then you can realize that when you step back on your scale, you're actually measuring the energy created by gravity + the stuff you're made off, as the number would be different somewhere else like the moon

There is still some energy left in the ashes, just not a whole lot. It requires at least some energy just to hold the protons together, that's why neutrons exists after all. If ash, or any kind of element, had absolutely zero energy at all, then every proton, neutron and electron would simply go on their own, merry solo way and merge with other things instead.
