we're plugged into the matrix because we believe in a model of our universe that is completely and fully explained

See that's something they would love you to believe though. There IS such a thing as a singular truth

There are things we can know for sure

Not all science changes

exactly

Everyone has their own “truth”

But sometimes that truth isn’t the real truth

Depends what you mean

But there is such a thing as truth

As in not a spectrum

it just happens that our "truth" is supported by what at least we believe to be proper science

Once you discover the basics, that really won't change much

science discovers new things but

I disagree, somethings will change, but something will always stay the same

Unchanging

There is no way to know for sure though

We were using the law of universal gravitation for a long time until we recently concluded that general relativity was more accurate in the long run

and modern science

is pretty darn close

to being able to accurately say what that truth is
