I agree with you on their uses in cold weather and you have a lot more experience than anyone here with that

Just wanted to know some reasons why

Well wet cold just sucks in general but it's impossible to use dry weather boots there. Snow gets on your boot it melts if the water gets in you're not having a fun time

I know some brits use sealskinz on rucks and find them fine

But at the same time @PunishedEmi said they shred your feet

Goretex boots suck unless you’re actively moving around in the snow

Otherwise waterproof socks and standard boots or if you’re static use overboots

I only ever found overboots helpful when standing still doing nothing

or if your snowshoes didn't fit your boots
