I mean colorado is a part of the southwestern tradition which is my absolute favorite stuff to cook. But it hasn't made the same contributions texas, california, new mexico, and the Carolinas have made to national food. Largely because its hard in colorado to source domestic veggies and spices year round. Alot of colorados culinary scene isnt dependent on domestic/regional but import and cattle.

The trick is spicing and getting ur aromatics from plants that grew out the same soil the meat was shitting in. Thats what makes the southwestern tradition so special. You have a brisket from a cow raised in central Texas thats got a rub in chiles that grew in central texas... it makes all the difference
