☝️ I made this recipe this week and and it was a big hit at a large gathering. A few notes: I substituted the red onion for a sweet one; the red and green peppers for an orange and yellow; parsley vs cilantro; added extra lemon juice vs lime; and used a can of corn vs frozen. 2 changes. I only used 1 tps of salt at first, and adjusted it at the end. It seemed too much.The dressing was too much, so I suggest pouring half in first to see how much it needs. I, basically, doubled the beans and peppers, and added a bit more of the spices from the dressing. It was yummy.

**Butternut Squash Soup**
1 butternut squash peeled, seeds scraped and cubed
1 small to medium onion
32 oz chicken broth
About 3/4 cup light cream
Red pepper flake
Hot paprika

SautΓ© onion in olive oil
When onion is translucent, add red pepper flake (to taste) and cubed squash. Add chicken broth and bring to boil. Boil approximately 15 to 20 min or until squash is soft. Turn heat down. Blend with an emersion blender. Add light cream slowly while blending.

Serve with a sprinkle of Hot Paprika to taste
