The Witcher 3's overworld honestly isn't as good as Skyrim's. It's mostly empty space. you'll have one short quest per villiage. Usually of the form "go kill this monster here and then return to be paid in random loot and some money." Some locations don't even have quests.
Where it shines is its story and characters, being far better than Skyrim's.

If you want a rich, engaging story, go for Witcher 3, if you want a vast open world with plenty to do to lose yourself in, go for Skyrim.

How's the combat in the Witcher 3?

I don't know much about the game aside from it being demanding on your pc and it being very good

You'll either like or love the combat but it's supposed to be improved from the combat in previous Witcher games.
