We call them Byzantines so we can separate Antiquity Rome and Medieval Rome.
They called themselves Roman, and were, in all purposes, Roman. Simply because they spoke Greek doesn't negate that. Because being a Roman is universal, it is an idea, not just a city or a people. Rome is an idea my boy.
