so question: i've been buying bison and elk steaks and everytime i cook them, they're getting tough and dry
is it because i'm cooking them like they're beef steaks?
i have medium rare on cuts of beef down, but when i apply the same time and temp to bison and elk, the results aren't the same and it vexes me
Try a lower temp, turn more often

The lower heat and more frequent turning keeps the juices in. You just cook it longer

that's the complete opposite on how i was taught to cook beef steaks
but i'm more than happy to give it a shot
Cook the elk like fish short time on each side
Ive never cooked beef steak.
And ps always use a hot pan

only reason i started buying bison and elk is to support a local butcher
he's pretty cool, if you bring game in, he'll process it for you for $50 or you can exchange some of the meat for the processing service
I cook elk all the time only thing I worry about is the spices for flavoring
sage is pretty good on elk, i've found
I like to rub spices on the raw meat.
