It's basically just a few layers of noise layered on top of each other with changing factors of intensity for each layer.

So the most intense layer makes the large shapes, mountains, then a smaller layer makes bumps and hills, then finer details and such.

That weird canyon I made is just 4 generators combined together, +1 to lop-side the overall height of the other four. Each can be distilled down to a pretty understandable procedural pattern.

Now, if we're talking something that literally looks like a replica mountain even in the minutia with trees, grass, accurate rock layers, then that takes more work, but to make something look passable isn't that hard.
