Umeboshi, know the Chinese have a version but the only ones near me are smoked and I'm not a fan of that.
These are the vietnamese versions I'm familar with, there's a bunch of different flavors
Any places to recipes? Japanese ones seem to rely more on controlling the specific breed of plum and varying the salt. Some variety would be nice though this is assuming I manage to source a tree, the plums are like fifteen bucks a pound.

They're fairly hardy and they tend to produce more fruit in the family
