All you need to read is E = M which shows that both have a direct relation. Change one and the other changes.

There is still some energy left in the ashes, just not a whole lot. It requires at least some energy just to hold the protons together, that's why neutrons exists after all. If ash, or any kind of element, had absolutely zero energy at all, then every proton, neutron and electron would simply go on their own, merry solo way and merge with other things instead.
