Almond flour and monkfruit or other non-chemical sugar substitute
Coconut flour is good, too
Tapioca flour tastes good, but is starchy and raises my blood sugar, so I don't use much
Those are my limitations
Still , it's gotta be good, kinda hard to mess up a cookie, sounds like a winner to me @Gailm
Dark chocolate is okay in small portions
There are some cookies that are soooooo good
And brownies can turn out really good, or dry as can be
Then a little cream or whipped cream helps
Kind of like 🎵 a spoon full of sugar helps the medicine go down 🎵
So no corn, wheat, rice ....

I grow an heirloom corn my family has kept since the war of northern aggression, probably longer, its as far back as I could find it wrote down
The heirloom corn would be okay as long as it is organic - no chemical fertilizers or pesticides
it is at least 6000 years old a guy from the collage told me, I don't know about these things
But, again, I'd have to watch it with the starch - blood sugar
Monsanto wants to do away with your heirloom corn and make you buy HIS perverted seeds
yeah I don't use chems on my food, seems wrong
He wants to make it ILLEGAL for you to grow your own and keep the seeds
They can want all they want, my seeds, my land , my water are for me to protect
