Sigma Octantis would be easy, for observatories in the southern hemisphere.
It is constantly observed, so they plotted it all out

Because it compensates for the rotational axis
the only thing that rotates are the heavens / firmament overhead
And that gif is exactly why flat earth makes no sense in regards to the equinox
